Ingredients

  • Chicken Filling

    • 1½ lbs boneless chicken legs (or thighs)
    • Juice of 2 lemons (for soaking)
    • 1 large tomato halved
    • 1 red bell pepper halved
    • 1 medium onion halved
    • 2 tsp salt
    • 2 tsp paprika
    • 1 tsp black pepper
    • 1 tsp garlic powder
    • 1 tsp cumin
    • 2 tbsp neutral oil
  • Avocado Cilantro Salsa

    • 2 ripe avocados
    • 1 cup fresh cilantro
    • ½–1 tsp salt (to taste)
    • ½–¾ cup water (to blend smooth)
  • Assembly

    • 4 medium flour tortillas
    • 2 cups shredded low-fat mozzarella
    • ½ cup sour cream
DIRECTIONS
  • Chicken Filling

    1. Soak the Chicken

    Place chicken in a bowl and cover with fresh lemon juice.

    Let soak for 20–30 minutes.

    Drain completely and discard the lemon juice before cooking.


    2. Cook the Chicken & Vegetables

    Heat oil in a large pan or pot over medium heat.

    Add drained chicken to the pot. Add tomato, onion and bell pepper Season with salt, paprika, black pepper, garlic powder, and cumin. Stir everything together.

    Cover and cook on low heat for about 1 hour, stirring occasionally, until the chicken is very tender.

    Shred or chop the chicken directly in the pot and allow the mixture to reduce slightly if needed.

    3. Make the Avocado Cilantro Salsa

    Blend avocado, cilantro, salt, and water until smooth and pourable. Adjust salt to taste.

  • Assembly

    4. Assemble & Grill

    Heat a grill pan or skillet over medium heat.

    Lay down a tortilla.

    Sprinkle cheese over half.

    Add chicken filling on top of the cheese.

    Fold tortilla in half.

    Cook until crisp and golden.

    Flip and cook until the other side is crisp and cheese is melted.
